Cinnamon Raisin Kamut Muffins

Happy Thursday! If you read my post last Friday, then you will know about the wonderful experience I had with SunWarrior and a great lady named Stephanie who works there! Well, in our correspondence she happened to tell me that her office was on a juice fast for the week! I wouldn’t survive a day without solid food, especially since I am eating every 3-4 hours! However, I’m sure there is a good reason for this fast! So I thought I would dedicate this SunWarrior protein recipe to Stephanie and the members of her team doing the fast! I know they are going to be looking for some yummy, healthy treats that aren’t high in calories once they are done! I hope you enjoy them!
Fit Ingredients
- 3/4c (73g) organic kamut flakes* (can sub oats, spelt or quinoa flakes)
- 1c (84g) ~4 scoops Sun Warrior Vanilla Protein Powder
- 1/2 c granular sweetener
- 1 tsp cinnamon
- 1/4 c (40g) raisins
- 1 1/2 tsp baking powder
- 1/2c greek yogurt (113g) (or yogurt of choice)
- 1 1/4c coconut milk
- 1 tsp pure vanilla extract
- 1/2c + 2tbs (151g) liquid egg whites

- 12 cup muffin tin
- non stick spray

Directions
Pre heat your oven to 325 degrees. Spray 8 muffin cups with non stick spray. In a bowl mix your kamut flakes, protein, sweetener, cinnamon and baking powder. Add in your yogurt, milk, vanilla and egg whites. Fold in your raisins. Bake for 20-22 minutes.
They came out so moist and flavorful! They had a great balance of cinnamon and sweetness! Plus they are very filling! I ate one (with a protein shake) before my workout for 3 days in a row!!! Delicious!!
*If you have never tried kamut flakes, they have a very distinct taste and texture. They are larger in size than oats, have a chewier texture when cooked and pack slightly more protein (great for us fitness buffs)! It took me a few trial recipes before I liked the flavor, but now I am in love with them!! P.S – I have always loved the texture though! So go ahead and expand your palate….you may just end up falling in love with them too! If not, make these with oats! They’re just as healthy and full of flavor!

*The fiber in these is very low, so feel free to add some flax or psyllium husk to increase the fiber! I will definitely be doing that next time!
