Chocolate Chip Pumpkin Spice Bread

Happy Monday! I hope you had a great weekend! I worked on Saturday but had a productive and relaxing Sunday! It was great! I know we are not officially into fall yet, but I just couldn’t hold out on sharing this recipe with you any longer! I have been eating pumpkin for the last few months, so the pumpkin recipes are abundant! :) I figured since we are 9 days into September now it was OK to start sharing them with you! ? I hope you enjoy! Have a great start to your week!

Chocolate Chip Pumpkin Spice Breadno image

Fit Ingredients

  • 1/2 c (56g) coconut flour
  • 2 scoops (60g) cinnamon protein powder (or vanilla/unflavored)
  • 1 tbs ground cinnamon
  • 1 tbs pumpkin pie spice
  • 1 tbs baking powder
  • 1c (244g) canned pumpkin (not pie filling)
  • 1/2 c + 3tbs (230g) liquid egg whites
  • 1 tbs pure vanilla extract
  • 1 tsp liquid stevia (adjust to desired sweetness)
  • 1/4 c (56g) chocolate chips/cacao nibs (add more or less)*

*I only used a few for just a hint of chocolate. If you really want to amp up the chocolate chips I would say 1/2c would be the way to go!

  • large loaf pan
  • parchment paper

Directions

1. Pre heat your oven to 350 degrees.

2. Line your loaf pan with parchment paper.

3. In a bowl, sift together your dry ingredients; coconut flour, protein powder, baking powder, cinnamon and pie spice.

4. In a second bowl, mix together your wet ingredients; pumpkin, egg whites, sweetener and vanilla.

5. Combine your wet and dry ingredients. Mix until just incorporated.

6. Fold in your chocolate chips.

7. Bake for 50-55 minutes or until a toothpick comes out clean.

8. Allow to cool before slicing.

Chocolate and my favorite fall flavors together?! Absolutely delicious!!! There isn’t a better way to kick off the fall baking season than with this easy to make and healthy bread! It packs great for work too! I brought in the remaining loaf for some co workers and it was a hit! :)
