Spiked Strawberry Peach Cobbler

Happy Tuesday! I hope you are having a great start to your week! It is the 22nd of the month which means it is time to share another delicious Recipe Redux challenge recipe! For those of you who aren’t familiar with Recipe Redux it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This months challenge was to create a recipe using alcohol! Well, as many of you know, I am not a drinker! haha Two glasses of wine and I am knocked off my socks for 2 days straight ( I am actually not kidding about that!). That means that I also never have alcohol in my house other than a few bottles of wine that I brought back from my trip to Napa on my 30th birthday……YEARS ago! haha

However, I knew I wanted to do something fruity and summer inspired. I opened up a drawer in my kitchen Sunday and found a nip of some cherry liqeuer that my aunt brought back from her cruise on the Rhine River and I immediately knew it would go perfect in this dessert! Feel free to leave the alcohol out if you’d like — and add in some fresh cherries instead! I hope you enjoy! Have a great Tuesday! 🙂

  1. 2 small peaches (200g)
  2. 1 cup fresh strawberries (140g)
  3. 2 tsp coconut flour (4g)*
  4. 2 tsp sweetener of choice (add more or less depending on sweetness of fruit)
  5. 1-2tbs Cherry Liqueur (or more if you’d like! ;))

Cobbler Top

  1. 1/3 cup Oat Flour (40g)
  2. 1 tbs coconut oil (14g)
  3. 1/4 cup milk
  4. 2 tsp sweetener of choice (again, add more if fruit is less sweet)
  5. pinch salt

Instructions

  1. Pre heat oven to 350 degrees
  2. Coat an oven safe baking dish with non stick spray.
  3. Chop peaches and strawberries into desired size chunks.
  4. Microwave fruit for 1-2 minutes until it becomes soft.
  5. Mix coconut flour, sweetener and liqueur into fruit.
  6. Pour fruit into bottom of baking dish.
  7. Combine all ingredients for cobbler top.
  8. Mix until dough forms.
  9. Evenly drop dough over top of fruit.
  10. Bake for ~ 18-20 minutes or until golden.
  11. Serve warm or chilled!
  12. It’s also great topped with some greek yogurt for creaminess!

  2. Calories: 233, Protein: 5.3g, Carbs: 39.3g, Fat: 9.7g, Saturated Fat: 6.7g, Sodium: 50mg, Fiber: 5.7g, Sugar: 12g, Net Carbs: 33.6g, Alcohol: 3g
  3. *The coconut flour will help thicken the fruit. Feel free to sub with flax, chia seeds or arrowroot. You could also leave it out if you prefer.
