Apple Cinnamon Coffee Cake

Happy Monday! I hope you all had an enjoyable weekend with your family and friends! The weather here has been quite crazy! One minute it is bright and sunny and the next there is a monsoon coming down!! Several times it left me going back and forth about whether to leave my house or not! Luckily, we had the Olympics to watch! Did you see any of them this weekend? Gymnastics and swimming are definitely two of my favorites! And of course, next Sunday I will be watching the marathon! So excited! The boyfriend and I are leaving for Aruba on Thursday, so I told him that I would be watching the marathon from the tiki bar ;) What are you favorite events to watch during the summer Olympics?

As, I mentioned last Friday in this post my taste buds have been gravitating towards vanilla and cinnamon lately! I honestly have no idea why! Cinnamon reminds me so much of the fall/winter! Although, I am beginning to think that I am totally over this horrible hot, humid weather and that I really want the fall to be here! So I am forewarning you now that, like my raspberries, I have been baking with cinnamon like a maniac, so if you start to see a trend ;) this would explain why! :)

Apple Cinnamon Coffee Cake

Fit Ingredients

  • 1/2c (60g) oat flour
  • 1/2c (46g) protein powder (vanilla or unflavored)
  • 1/2 tsp cinnamon
  • 2 tsp baking powder
  • 1/3c stevia
  • 1/4c (56g) applesauce
  • 1/2c (113g) greek yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp xanthum gum (optional)
  • 1/2c (100g) apple, shredded

Topping

  • 1 tsp cinnamon
  • 1 1/2 tbs stevia
  • 1oz (28g) crushed pecans

  • 6×8 in baking dish
  • non stick spray

Directions

Pre heat your oven to 350 degrees. Spray your baking pan with non stick spray. In a bowl mix your oat flour, cinnamon, protein powder, baking powder, xanthum gum and stevia. In a second bowl whisk your eggs, applesauce, greek yogurt and vanilla extract. Add your wet ingredients into your dry ingredients and mix well. Fold in your shredded apples. Pour the batter into your baking dish. In a small bowl, mix your topping ingredients. Sprinkle over the top. Bake for ~23 minutes. Allow to cool before serving.

This cake came out very moist and full of cinnamon flavor!! The pecans on top gave it the perfect amount of crunch! Serve it as a healthy dessert topped with greek yogurt or along side some egg whites and berries for breakfast! You could also have a slice pre workout or as a snack like I did! ;) (Hey, it’s so healthy it can be eaten any time of day!)
