Baked Goat Cheese & Kale Egg Whites

Serves: 1

I haven’t done a savory week day post in almost a month, so I figured, why not throw one in! We can’t be eating sweet things all day, every day!! We need to make sure we get our greens in there too! I know my palate definitely gravitates back and forth between sweet and savory quite a bit! One minute I might be thinking of making something sweet for breakfast and then when I start to cook, it totally changes!

Baked eggs are one of my favorite things to eat for breakfast (or lunch/dinner)! You can throw in anything you have in your fridge and it is bound to taste absolutely delicious!! Plus they are very simple to make and allow you to step away and get a few things done while they are in the oven (like stalk browse other food blogs!) ?

Directions

Pre heat your oven to 400 degrees. Spray your raekin with non stick spray. In a bowl whisk together your egg whites, and coconut milk. This recipe is loaded with protein! Serve it with a side of fresh avocado and fruit (I had apple slices) or some Ezekiel toast! It makes the perfect filling, yet light meal for any time of day!
