Chocolate Coconut Protein Squares

Happy Monday! I hope you had a great weekend! I actually had 2 days off in a row and it was amazing!! However, it also felt a bit odd! But it did give me plenty of time to get my errands done, spend some time in the kitchen AND relax!! Plus, I had a last minute surprise visitor too! My cousin, Samantha, stopped by on her way back to college and we spent some quality girl time together getting a manicure and talking! It was the highlight of my week! Plus, she taste tested this weekends recipes! Big WINS! It was so nice to be able to finally spend some time with family since being back home! Don’t worry, I made sure to send her back to college with a healthy dinner and plenty of snacks to keep her going this week!That’s what big cousins are for, right? ?

Fit Ingredients
- 2 scoops (56g) Designer Whey French Vanilla protein powder (or whey of choice)
- 1 c (226g) no salt cottage cheese
- 1/4 c (56g) coconut manna, softened
- 2 large eggs
- 1 tsp pure vanilla extract
- stevia, to taste
- coconut extract, optional
- 2 tbs (15g) reduced fat shredded coconut
- 2 tbs (28g) chocolate chips

- 5×7 in baking pan
- parchment paper
- non stick spray

Directions
1. Pre heat your oven to 350 degrees.
2. Line your baking pan with parchment paper and then coat with cooking spray.
3. In a blender, mix your coconut manna, cottage cheese, eggs, vanilla, sweetener and coconut extract, if using.
4. Add your protein powder into your blender and mix.
5. Pour your batter into your lined baking pan.
6. Bake for ~12-15 minutes or until set.
7. Sprinkle Coconut on top.
8. Put your chocolate chips in a ziplock bag and microwave about 1-2 minutes or until melted.
9. Snip off the corner of the ziplock bag and drizzle chocolate over top of the bars.
10. Allow the bars to cool and the chocolate to set before slicing.
11. Enjoy!
These bars are an explosion of chocolate and coconut!! They were to die for! WOW!! They were so good after having a few too many, I sent Samantha home with the remainder….otherwise they wouldn’t have lasted another second in my house!
