White Chocolate Cranberry Loaf

Happy Monday! I hope you had a great holiday weekend with your family and friends! My holiday was wonderful, filled with family, friends and of course, work! This time of year is very important for exercise with all the holiday goodies around us, so there is no rest for the weary! But having delicious and healthy treats like this recipe around makes the days much more yummy! ?
This month the Recipe Redux had a challenge for us using Monk Fruit In The Raw to make a recipe healthier! For those of you unfamiliar with this new product, Monk Fruit In The Raw is a 100% Natural, Zero Calorie Sweetener that measures cup for cup like sugar. I had never heard of it or tasted it prior to this challenge and then all of a sudden commercials started popping up on TV and I received some samples! It was absolutely delicious and has a sweet flavor that resembles a brown sugar. It didn’t leave any after taste either! I used it in this recipe to replace normal white sugar, which reduced the calories dramatically!

Fit Ingredients
- 1/2 c (56g) almond flour
- 1 scoop (30g) vanilla whey protein powder
- 1/4 c Mon Fruit In The Raw
- 1 tbs (7g) flax
- 1/2 tsp baking powder
- 1 large egg
- 2 tbs applesauce
- 1/2 tsp pure vanilla extract
- 1/4c milk
- 1/3 c (30g) dried cranberries*
- 3 tbs (21g) white chocolate chips*
*Can add more or less

- 4×8 in loaf pan
- non stick spray
*********************************************************************
Directions
1. Pre heat your oven to 350 degrees.
2. SPray your loaf pan with non stick spray.
3. Combine your dry ingredients in a bowl.
4. Mix your wet ingredients in a separate bowl.
5. Mix together your wet and dry ingredients.
6. Fold in your cranberries and white chocolate chips.
7. Pour batter into the loaf pan.
8. Bake for about 20-22 minutes*
9. Allow to set before slicing.
*Bread may seem as if it is slightly under done but it will continue to set as it cools.
All I have to say is WOW!!! Tart cranberries, sweet white chocolate all wrapped up in a healthy flax and protein packed bread! It was the perfect dessert with some hot tea!
