Tropical Tango Bread

Happy Tuesday! I hope you had a great long weekend! The weather on the Cape finally broke yesterday and we couldn’t have asked for a better day! It was sunny and 70 degrees! The perfect weather for me to be outside doing yard work with my grandmother. Well, more like me staining wood and weeding the garden while she directed me! ;) But it was well worth the sweat to see her happy face after! Plus she treated me to an amazing dinner later that night! The rest of the weekend we spent relaxing, reading, shopping and of course, I got in some awesome yoga classes!

Now that the weekend is over, it is time to get back into our yummy recipes! This bread recipe, I must say, definitely, is the best of all the bread recipesI have made so far (in my opinion of course)! Well, maybe it rivals this one, but it is still amazing! It is also the perfect recipe to kick off the warm weather for summer! This one is sure to send your taste buds to a tropical island! I hope you enjoy! :)

Fit Ingredients

  • 1/2 c (56g) coconut flour
  • 2 scoops (60g) Jay Robb Tropical Dream protein powder (or whey protein of choice)
  • 1/2 c baking stevia (or sweetener of choice)
  • 1 tbs baking powder
  • 3 small bananas (~200g) , mashed
  • 1 c + 2tbs (276g) liquid egg whites
  • 1 c (140g) diced pineapple and mango (if frozen, make sure to thaw and pat dry)

Directions

1. Pre heat your oven to 350 degrees.

2. Line your pan with parchment paper.

3. In a bowl combine your dry ingredients: coconut flour, protein powder, stevia and baking powder.

4. In a second bowl mix together your wet ingredients: mashed banana and egg whites.

5. Combine your wet and dry ingredients.

6. Fold in your diced pineapple and mango.

7. Pour batter into the pan.

8. Bake for ~ 50 minutes or until golden.

 

All I can say is “WOW”!!! This bread is LOADED with tropical flavors!!! The banana, pineapple, mango, and coconut flour combined make one delicious bread! It was so moist and light too! This one was so good it was gone before I could blink my eyes!! I was snacking on it non stop! Spread a bit of coconut butter on it and you will be thanking me for weeks to come! ;)
