Savory Bean Bread

Happy Friday! I hope you have had a great week! I am always excited for Friday’s, but this week I am extra excited! Tonight I am taking an inversion class at my yoga studio. One and a half hours of handstands, headstands and forearm balances! I can not wait! The boyfriend thinks I’m crazy, especially when I bust out a forearm balance in the middle of our workout at the gym! haha I will report back on Monday and let you know how it goes! Let’s hope I don’t damage anything! ? Also, the Knicks and Celtics are playing one another in the NBA playoffs this weekend! The boyfriend is a Knicks season ticket holder and I am a Celtics fan (represent Boston), so I am hoping he takes me along to one of the next few games…..fingers crossed! If not, you can bet I will be watching on TV and routing for the Celtics!
Sunday is also the 21st, which means it’s Recipe Redux day!!! I have one amazingly delicious coming your way too!
We have been on quite the sweet recipe trend lately, haven’t we?! The ride has been delicious, but my taste buds need a switch! After eating almost all sampling those sweet treats (for your benefit of course), I couldn’t deny my cravings for something more savory! Too much of one thing usually sends me running in the opposite direction! haha This time that direction was towards this amazing bread! After eating this, I don’t think I will ever buy another savory loaf of bread again because the flavors in this ROCKS!! Plus it is packed with protein and fiber without using any protein powder!! (because let’s be honest, we all know I needed a break from that too!) haha This may even qualify as a #strangebutgood recipe, no? ?

Fit Ingredients
- 1/2 c (56g) coconut flour
- 3 tbs (32g) Nutritional Yeast
- 1 tbs baking powder
- 2 tsp Frontier Veggie Pepper or black pepper of choice
- 3/4 tsp onion powder
- 1/2 tsp garlic powder
- Salt, optional
- 1 c (260g) no salt red kidney beans, drained, rinsed and mashed ?
- 1/2 c (113g) greek yogurt
- 1 3/4 c (276g) liquid egg whites

- parchment paper

Directions
1. Pre heat your oven to 350 degrees.
2. Line your loaf pan with parchment paper.
3. In a bowl whisk together your dry ingredients: coconut flour, nutritional yeast, baking powder, black pepper, onion powder, garlic powder and salt, if using.
4. In a second bowl whisk together your mashed beans, egg whites and greek yogurt until well blended.
5. Combine your wet and dry ingredients.
6. Pour your batter into the pan.
7. Bake for ~ 52 minutes. (It will seem a bit soft still, but it will continue to set)
8. Allow to cool in the pan for about 30 minutes.
9. Transfer to a cooling rack to finish.
10. Slice and eat!!
If you like savory, then this will blow your doors off!! I was skeptical at first, but this turned out a 1000x’s better than expected! I topped mine with some fresh mashed avocado for snack one day….to die for! It was moist, light, fluffy and just like a specialty loaf from Whole Foods! Mmmm……. ?
Isn’t the color amazing! The avocado pairs so well!!

Calories: 67.3g, Protein: 6.6g, Carbs: 7.6g, Fat: 0.9g (0.9g Saturated), Sodium: 53mg, Fiber: 4g (Net Carbs: 3.6g)
*This could easily be made into much thicker slices if you prefer. I sliced mine into 12 which is what the photographs show.
