Raspberry Cake Batter Protein Bread
This recipe is by far one of my favorite! I have been making different versions for the last few years and it never disappoints! This time I gave it a bit of “love” with some red raspberries and a topping of sweet coconut butter to help get us in the mood for Valentine’s Day and start our day off with a simple and protein packed treat!

Raspberry Cake Batter Bread Author: Sarah Recipe type: Breakfast Ingredients
- ½ cup coconut flour
- 1.5 scoops vanilla protein powder
- ¾ cup dry sweetener of choice
- 1 tbs baking powder
- pinch salt
- ½ cup + 3 tbs cake batter eggwhites
- 1 cup applesauce
- 1 tbs coconut oil
- 2 tsp butter extract
- freeze dried raspberries, if desired
- coconut butter, if desired
Instructions
- Preheat oven to 350 degrees
- Line a large loaf pan with parchment paper
- Sift together dry ingredients
- Mix in wet ingredients
- Gently stir in crushed freeze dried raspberries, if using
- Pour batter into pan
- Bake for 40-45 minutes or until just set
- Allow to cool before slicing
