No Bake Peppermint White Chocolate Cookies
Tis’ the season for all things sweet, delicious and cookie related!! These simple treats require no baking and can be done in a matter of minutes, making them the perfect last minute recipe!
No Bake Peppermint White Chocolate Cookies Print Prep time 30 mins Total time 30 mins Author: Sarah Recipe type: Dessert Serves: 18 cookies Ingredients
- 1 cup oat flour (120g)
- 1 cup rolled oats (80g)
- 2 scoops vanilla protein powder (80g)
- ½ cup white chocolate peanut butter (128g)
- ¼ cup honey (84g)
- ¼ cup vanilla eggwhites (+ 2 tbs if needed)*
- 1 tsp peppermint extract
- pinch salt
- TOP
- 5-6 tbs white chocolate
Instructions
- Mix together dry ingredients: oats, oat flour and protein powder
- Mix in honey, white chocolate peanut butter, peppermint extract and ¼ cup eggwhites
- Mix well (this will require some mixing)
- Depending on your protein powder you may need to add 1-2tbs vanilla eggwhites
- Once combined place in refrigerator for 15 minutes
- Remove and shape into desired size cookies
- Melt white chocolate and drizzle over cookies
- Decorate, as desired
