Mexi Cauli Rice with Seared Scallops

Today, I have a delicious, quick and super healthy recipe for you made with my favorite SizzleFish Scallops! If you haven’t checked out their fish, you MUST! I can’t even tell you how fresh tasting it is! Plus, perfectly portioned! You all know I love it too because I use it all the time!

- 3/4 cup cauliflower, riced
- 1/4 cup roasted corn
- 4 cherry tomatoes, halved
- Frontier No Salt Mexican Seasoning
- SizzleFish Scallops (4oz)
- Flavor God Everything Spicy Seasoning
- 2 tps OMghee
Instructions
- Saute riced cauliflower in medium skillet until golden
- Add in corn and seasoning
- Cook for an additional 2 minutes
- Remove cauli rice from pan
- Heat 1 tsp ghee in skillet over medium heat
- Sear scallops in ghee until cooked as desired
- Sprinkle with Flavor God Seasoning
- Top cauli rice with seared scallops and halved tomatoes
- Melt remaining tsp ghee and drizzle over top
