Ingredients
- 2 eggs
- Jicama ,thinly sliced into circles to fit your dish
- Ranch Seasoning , to taste
Instructions
- Preheat oven to 400 degrees
- Coat a 4-inch oven safe dish with ghee/coconut oil or nonstick spray
- Whisk together eggs and seasoning
- Layer jicama slices into dish
- Pour eggs on top
- Finish off with an additional sprinkle of ranch seasoning
- Bake for about 20 minutes or until eggs are cooked and jicama is fork tender
