Three ingredients. That’s it! Could it be any easier? By now, I’m sure you know my love of all things quick (and easy)! And if you follow me on Instagram then you know my love of eggs! It’s really more like an obsession. We have the epic cheeseburger omelette, cajun salmon frittata, bacon, egg & mango waffles, and for my sweet side, banana split crepes. The crepes may be more like dessert, but they are still egg based! Win!

I love eggs for quite a few reasons. 1) they taste delicious! 2) they are very versatile (see above sweet and savory options), 3) they are an excellent source of protein, and 4) when my days are crazy and my head feels like it’s spinning at 7am I can make something quick and simple like this 3 Ingredient Baked Jicama Ranch Egg Stack in a matter of minutes!

Instructions

  1. Preheat oven to 400 degrees
  2. Coat a 4-inch oven safe dish with ghee/coconut oil or nonstick spray
  3. Whisk together eggs and seasoning
  4. Layer jicama slices into dish
  5. Pour eggs on top
  6. Finish off with an additional sprinkle of ranch seasoning
  7. Bake for about 20 minutes or until eggs are cooked and jicama is fork tender
