Gingerbread French Toast

Serves: 1-2

Happy Friday! I hope you have had a great week! It looks like we are in for some gorgeous weather this weekend! At least here in NJ! Sunny and high 70’s?! That is perfection! I can’t wait to get outside! But before we all head out to enjoy our weekend we have two things to take care of!

The second (delicious) piece of business to address is this drool worthy recipe! ? For those who follow me on Instagram you saw me post this the other day! I had an overwhelming number of people ask for the recipe. Feel free to adjust the toppings to whatever you desire. This meal fit perfectly into my post workout macros….and satisfied my sweet craving in a healthy way! :) I hope you enjoy it! Have a fabulous weekend!

Fit Ingredients

  • 4 slices bread
  • 2 large egg whites
  • 2 tbs milk
  • 1 tsp cinnamon*
  • 1/4 tsp ginger*
  • 1/8 tsp cloves*
  • 1/8 tsp nutmeg*
  • vanilla stevia, optional

*adjust to your desired spice level

Topping

  • 1/4 c mashed sweet potato
  • 1/2 tbs (7g) 65% organic cacao chips (or chocolate chips)
  • 1 tbs (7g) crushed pecans
  • cinnamon

Side

  • 1/2 c (113g) no salt cottage cheese
  • 3 drops Sweet Leaf Vanilla Creme stevia

Directions

1. Whisk together egg whites, milk, stevia and spices.

2. Heat a non stick pan (I used a grill pan) over medium heat.

3. Dip each slice into your egg mixture and place in the pan.

4. Cook for 4-5 minutes on 1st side or until golden.

5. Turn and cook for an additional 2-3 minutes.

6. Top with mashed sweet potato, pecans and cacao chips.

7. In a bowl mix together your cottage cheese and stevia.

8. Serve along side your french toast.

9. EAT!!! :)
