Coconut Blackberry Parfait

Can you tell that I have been buying a lot of fresh berries lately?! :) There is nothing I would rather add to a meal or snack this time of year than sweet, juicy berries! Plus they are full of fiber, antioxidants and low in calories!

This parfait was the perfect breakfast on a hot, humid New England morning like yesterday! It was cool, creamy, crunchy and sweet! It takes less than 5 minutes to make and requires no cooking! It would also make a perfect snack or after dinner dessert!

Fit Ingredients

  • 1.5 c kamut puffs (or cereal of choice)
  • 3/4 c (184g) fat free, low sodium ricotta (I used this one)
  • 2 tsp coconut extract
  • 1 tbs coconut oil or butter/spread
  • 50g blackberries (or fruit of choice)

Directions

In a bowl, vigorously mix together your ricotta, extract and coconut oil/butter by hand (you can also use a blender, but since it is such a small amount a little arm muscle and a spoon do wonders!) until creamy. Then layer half of your cereal, ricotta mixture and berries in a bowl or glass. Repeat a second time ending with blackberries on top! That’s all you’ve got to do! :) Feel free to top with some extra shredded coconut!

*All of the saturated fat in this recipe comes from the coconut oil. Although most of us hear the words “saturated fat” or just “fat” for that matter and assume it is bad for you, this is not the case. Since coconut oil is naturally occuring, as opposed to created by man, it does not have the same impact on the body. It is actually good for you! It has many benefits such as increasing metabolism, promoting a lean body and weight loss (if needed), increasing your thryoid and more!
