20 Minute Cranberry Orange Salmon

Who doesn’t love a dish made in less than 20 minutes? Especially one that is a little bit of sweet, a little bit of savory and a whole bunch of health! Plus, it is just gorgeous to look at! This recipe also makes a great meal prep recipe! Pack the leftovers for a healthy and quick, low carb lunch for the following day!

20 Minute Cranberry Orange Salmon

Prep time 2 mins Cook time 18 mins Total time 20 mins   Author: Sarah Recipe type: Dinner Serves: 2 servings Ingredients

  • 2 pieces coho salmon
  • 1 cup frozen cranberries, thawed
  • ¼ cup orange jam
  • 1 tbs orange zest
  • salt & pepper, taste

Instructions

  1. Preheat oven to 375 degrees
  2. Line baking sheet with foil
  3. Place salmon fillets on baking sheet
  4. Season with salt, pepper or seasonings of choice
  5. Bake for ~18 minutes
  6. While salmon is baking combine cranberries and orange jam
  7. Heat in microwave for 1 minute
  8. Mix in orange zest
  9. When salmon is done, top each salmon fillet with half of the jam
  10. Serve

Notes *I have also made this using a bit of garlic and onion powder for seasoning
**This salmon was served over riced cauliflower that was sauteed in ghee and seasoned with cracked black pepper 3.5.3208
