Boston Cream Pie Muffins
Happy first Monday of 2015 friends! I hope you kicked off 2015 in a happy and healthy way! Since most of us are trying to recoup from the holiday sweets and start this year off on a healthy note….I thought why not share a sweet, protein packed recipe that is not only calorie friendly, but also tastes amazing!!

- MUFFIN
- 3/4 cup Flap Jacked Buttermilk Protein Pancake Mix
- 1 large egg white
- Stevia, to taste (I used about 10 drops)
- 1/4 cup milk
- FILLING
- 1/4 cup Chobani plain greek yogurt
- 1/4 scoop Jamie Eason Lean Body For Her Vanilla Whey Protein
- TOPPING
- 1 tbs Sweet Spreads Chocolate Brownie CocoNutter
Instructions
- Preheat oven to 350 degree
- Mix together muffin ingredients
- Evenly divide between 2 large muffin cups (or can use 4 smaller ones)
- Bake for ~20 minutes
- Using a pairing knife, cut a circle in the top of each muffin in the shape of a cone
- Mix together greek yogurt and protein powder (add sweetener, if desired)
- Evenly divide greek yogurt between each muffin
- Drizzle with melted Sweet Spreads
