Black Forest Trifle
Serves: 1 (large serving)
Happy Thursday! We are quickly approaching the end of the week! I bet you are just as excited as I am!!!! Tomorrow is the boyfriends birthday (30th…shhh!!) and he has requested a 7-layer cake! Yes, a homemade 7 layer cake! He wants a chocolate cake with vanilla frosting….and not a healthy one! haha So you can all guess what I will be spending half of my day doing tomorrow!! Of course, I will be making myself my own little mini healthy 7-layer cake so I can participate in the chocolate fun too…..but without the guilt and flour! ? I am sure you will see some pictures on Instagram/Twitter over the weekend! And if you don’t follow me on either of those 1) you should be asking yourself why not?! ? and 2) I will share some pictures….and maybe a recipe with you next week!
But in the mean time, here is a nice chocolate dessert that you can enjoy, guilt free, this weekend! It is so healthy you could eat it for breakfast, like I might have done one morning when I was craving sugar after a long run and tough lift! Ooops! ?
Fit Ingredients
Cake:
- 2 tbs (15g) chocolate hemp protein powder (I used Nutiva)
- 1 tbs (8g) vanilla whey protein powder
- 1 tbs (5g) Hershey Special Dark Chocolate cocoa powder
- 1 tsp stevia, powdered (adjust to desired sweetness)
- 1/4 tsp baking powder
- 1/4 tsp pure vanilla extract
- 1 large egg
- 2 tbs coconut milk
Cherries:
- 1/2c (70g) cherries (fresh or frozen)
- 1/8 tsp brandy, optional
Cream:
- 3/4c (6oz) fat free, low sodium ricotta cheese (I used Calabro) or greek yogurt
- Vanilla stevia (drops), to taste
- 1 tbs (6g) chopped walnuts, optional

- large microwave safe mug
- non stick spray
- Parfait glass, optional

Directions
1. Spray your microwave safe mug with non stick spray.
2. In a bowl combine all of your cake ingredients.
3. Mix well.
4. Pour your batter into your mug and microwave on high for 1 1/12-2 minutes. *This will vary as all microwaves are different.
5. Remove your cake from the mug and allow is to cool.
6. In a second bowl mix your ricotta (or greek yogurt) and stevia.
7. In a 3rd bowl combine your cherries and brandy.
8. Take your mug cake and cut into about 1in cubes.
9. Take your parfait glass and lay 1/2 of the cake on the bottom.
10. Place half of the cherries on top of the cake.
11. Layer 1/2 of your ricotta onto the cherries.
12. Repeat the layers.
13. Top with walnuts, if desired.
14. Eat with a long spoon! ?
Ok, so I don’t really think you need me to tell you how utterly amazing this trifle tasted!! It was literally like heaven to my mouth! It had a deep chocolate flavor from the cocoa powder and hemp, which was offset by the creamy ricotta and sweetness of the cherries! I might have just happened to eat this 2 days in a row! ? DELICIOUS!!! Now, stop drooling and quickly run and make one!

Calories: 298.9, Protein: 37.7g, Carbs: 24.4g, Fat: 7.1g (3g Saturated), Sodium: 214mg, Fiber: 8g (Net Carbs: 16.4g)
This makes a HUGE dessert, so feel free to divide it in half for those of you watching your calories! Also, where else can you find a cake that packs in 8g of fiber, a third of your daily requirements, plus has only 16.4g of net carbs!??
