Apple Crumble Muffins

Happy Friday! I hope you have had a great week! Can you believe it is the weekend again?! I have quite a few things coming up in the next few weeks, so I will be spending most of my weekend finishing up some delicious recipes I have to share with you! I want to make sure I don’t miss a beat! :)

But before we dive into the weekend, I want to share this delicious fall inspired recipe with you! For my long time followers, you know my love of muffins! They are quick, easy, a great “grab n go” snack and already portioned out! What’s not to like? Of course, with fall being in full swing, I had to make something apple inspired! I hope you enjoy them! Fit Ingredients

  • 3/4 c (84g) almond flour
  • 1 tsp (5g) psyllium husk (or flax)
  • 1 tsp baking powder
  • 3 tbs dry sweetener of choice (I used baking stevia)
  • 1 tsp apple pie spice
  • 2 large eggs
  • 1/2 c (113g) apple sauce
  • 1 1/2 tsp pure vanilla extract

*or granola of choice

  • muffin tin
  • liners

*************************************************************************

Directions

1. Pre heat your oven to 350 degrees.

2. Mix together all ingredients except for your granola.

3. Evenly divide batter between 6 lined muffin cups.

4. Sprinkle granola on top.

5. Bake for ~ 22-25 minutes.

These muffins are like an apple pie party in your mouth….with a crumbly crunch! The nuts and seeds from the granola give it an earthy, yet sweet flavor! I couldn’t have been happier with the results of this recipe! Absolutely amazing!!! :) They are also really good with a scoop of greek yogurt on top too! Kind of like apple pie and ice cream ?
