White Chocolate Pumpkin Spice Granola
Can’t stop, won’t stop! ? Can you just hear me singing about all things pumpkin right now? Don’t worry, I will be getting in a delicious dose of apples too! I mean, it is fall, right? Until then, this simple recipe is perfect for breakfast, snack or even dessert! And those big oat clusters….yum!

- 4¼ cup rolled oats*
- 2 tbs ground flax
- ⅓ cup cassava flour**
- ¼ cup cinnaspice***
- ¾ cup pumpkin spice peanut butter
- ½ cup honey or sweetener of choice
- ¼ cup coconut oil
- ¼ cup white chocolate chips****
Instructions
- Preheat oven to 325 degrees
- Line baking sheet with parchment paper
- Mix together dry ingredients: oats, flax, cassava flour and cinnaspice
- Melt coconut oil and then mix in peanut butter and honey
- Combine wet and dry ingredients
- Mix until evenly coated
- Spread granola on baking sheet
- Bake for ~20 minutes
- Give it a good stir
- Bake for another ~15 minutes or until golden
- Allow to cool slightly and toss in white chocolate chips if you’d like them to melt into your granola OR wait until it is fully cooled and toss
- Store in a sealed container
Notes *sub gluten free, if needed
**use whole wheat or favorite gluten free flour
***can sub with cinnamon or pumpkin pie spice, but only use 2tbs
