Tomato, Thyme and Parma Tart

Happy Tuesday! How was the start to your week yesterday? Mine was VERY HOT!! Holy cow! I saw 96 degrees here in NJ and the humidity……it is at an all time high! But I still managed to sneak out around 7:30pm to get in a quick 30 minute walk. I am really enjoying these evening strolls that were inspired by my beautiful friend Jody and here #whatsbeautiful #10minutesaday campaign! Today’s recipe has been sitting in the archives for awhile! I made this on a whim one day when I was craving something savory and bread like! It turned out so much better than I expected, so I had to make it again to share with you! It tasted almost like eating a cross between a pizza and a foccaccia! And let’s be honest, who doesn’t love anything that is pizza flavored? Plus, it is very simple to make and doesn’t require a lot of ingredients! I hope you enjoy! :)

Fit Ingredients

  • 1 c (112g) all purpose flour (I used this one)
  • 1 tsp baking powder
  • 1/2 c water
  • 1/2 tsp olive oil
  • 2 tsp (4g) Parma
  • 1/2 tsp dried thyme
  • Onion powder, garlic powder
  • 4 large tomato slices (~95g)
  • Salt, optional

  • 5x7in baking pan
  • non stick spray

Directions

1. Preheat your oven to 425 degrees.

2. In a bowl, combine your flour, baking powder and water.

3. Mix until a dough forms.

4. Spread your dough into the bottom of your pan (about 1/2 in thick)

5. Rub olive oil on the top of your dough.

6. Sprinkle onion powder, garlic powder and salt (if using) on top.

7. Crush the thyme in your fingers and sprinkle on top.

8. Lay your tomato slices on top of your seasonings.

9. Sprinkle your parma over the tomatoes.

10. Bake for ~ 20 minutes.

Serve along side some delicious eggs and fruit at breakfast like I did!! It was the perfect combination of sweet and savory to start the day! :) I also used it as bread for a turkey sandwich, which was amazing!
