Sweet Potato Raisin Bread

Happy Monday! I hope you had a great weekend! My weekend was definitely a good one! I enjoyed my inversions class yesterday despite the fact that it was not what I had expected. It was at a different studio than where I practice and took my last class. I still learned a few good tips though! We have also been enjoying lots of sunshine which has been so nice!
Today’s recipe is a spin off of some of the more recent bread recipes you have seen lately! I was craving a cinnamon raisin bread and had some extra sweet potato left over one day, so decided to put it all together into this delicious recipe! It was the perfect way to start my morning! I hope you enjoy!
Fit Ingredients
- 1/2 c (56g) coconut flour
- 2 scoops (60g) vanilla whey protein powder (or egg white protein powder)
- 1/2 c baking stevia or sweetener of choice
- 1 tbs baking powder
- 2 tbs cinnamon
- 1 1/3c (322g) liquid egg whites
- 1 c (200g) mashed sweet potato
- 1 tbs pure vanilla extract
- 1/2 c (80g) raisins (no sugar added)*
*can add more or less. I felt the bread could have used more

Directions
1. Pre heat your oven to 350 degrees.
2. Line your baking pan with parchment paper.
3. In a bowl whisk together your dry ingredients: coconut flour, protein powder, sweetener, baking powder and cinnamon.
4. In a second bowl vigorously mix your egg whites, sweet potato and vanilla until well combined.
5. Mix together your wet and dry ingredients.
6. Fold in your raisins.
7. Pour batter into the pan.
8. Bake for ~ 55 minutes.
As you know cinnamon and raisins are one of my favorite flavor combinations, so this soft, moist loaf got a big gold star from me!! It was loaded with sweet cinnamon flavor and chewy raisins! It was the perfect way to start off my day, plus get a fruit and veggie in one recipe! It is also amazing toasted and turned into a turkey sandwich for a bit of sweet and savory…..just saying ?
