Sweet Chorizo & Egg Breakfast Sandwich
Happy Monday! I hope you had a great weekend! I have been visitng my sister in AZ and it has been HOT! Not, that I am complaining since it has been so chilly back east lately!
Today, I am sharing another sweet and savory breakfast recipe that is very quick and easy to prep in advance and make whenever you have a craving! Plus, this sausage patty is a great healthy alternative to any fast food restaurant!

- 1 english muffin
- 1 large egg
- 1.5 oz 5280meat chorizo
- 1 tsp Essentially Coconut Sweet Almond Butter
- 1 small apricot (can sub applesauce if preferred)
Instructions
- Dice or mash up apricot (can use a puree if preferred)
- Mix apricot with chorizo
- Add in essentially coconut (or coconut butter of choice)
- Shape into a patty and cook over medium heat until cooked through
- Place english muffin in toaster over
- While english muffin is cooking, cook your egg, as desired
- Place chorizo patty on top of english muffin and finish off with your cooked egg
- Serve with a side of fresh fruit
