Southwestern Spinach Sliders
Serves: 3 (2 burgers each)
Happy Friday! I hope you had a great (short) week! As most of you know, I have been working a crazy amount of hours, which means meal prep is very important every weekend! I have been on a huge spinach kick lately, but needed a flavorful way to change it up! These little (bunless) sliders were the perfect way! They are easy to pack and taste amazing warm or cold! Fit Ingredients
- 2 cups (498g) frozen spinach, thawed and squeezed dry
- 1 large egg
- 1 large egg white
- 2 oz cheese (I used Trader Joe’s Low Sodium Colby Jack)
- 2 tbs (14g) almond flour/meal
- 1 tbs Mexican Seasoning (adjust to desired taste)
- Salt and Pepper, if desired
Directions
1. Pre heat your oven to 375 degrees.
2. In a bowl mix together all of your ingredients.
3. Form mixture into 6 mini burgers (or 3 large).
4. Place burgers on a lined baking sheet.
5. Bake for about 15-18 minutes or until cooked.
6. Serve!
These were the perfect mini meal! They had the amazing southwestern flavor, melty cheese and tons of nutrients from the spinach! These are definitely going to be a regular part of my weekly meal prep.
