Happy Friday! I hope you had a great week! As always, mine flew by! I am hoping that I will be able to sneak in a little more sister time this weekend! Can you believe that an entire week of November is already gone by?! Where do the days go! Before we dive head first into winter (which it already feels like it is here….28 degrees in the morning? Ugh!) I wanted to share this delicious recipe with you! Apple butter is one of my favorite flavors of fall! It pairs so nicely with the toasty flavor of flax and warm cinnamon in this single serve cake! I hope you enjoy! Have an amazing weekend! :)

Fit Ingredients</p

  • 1/4c (26g) flax
  • 1 tsp baking powder
  • 1/2-1tsp ground cinnamon (I used 1 tsp)
  • 2 tbs apple butter (plus more for top, optional)
  • 1 tbs milk
  • 1 large egg
  • 1/4 tsp vanilla extract
  • Sweetener, to taste (I used a few drops of cinnamon stevia)

  • Microwave safe mug
  • Non Stick Spray

Directions

1. Spray your mug

2. Combine your ingredients in a bowl.

3. Pour batter into your mug.

4. Microwave for 2.5-3 minutes or until just set.

5. Allow to cool in mug before removing.

6. Top with additional apple butter, if desired.

Oh – My – Goodness!!! I LOVE apple butter and this was amazing! It was light, moist and super flavorful!! It would be amazing topped with some greek yogurt too! Plus, it is soooo quick and easy!
