Seared Scallops with Mashed Cauliflower
Happy Monday! I hope you had a great weekend! ? Today’s recipe was one that I randomly posted on my instagram page a couple weeks ago. I had so many requests for the mashed cauliflower recipe that I figured I should share it with everyone! Topped with some pane seared SizzleFish Scallops, this quick meal is the perfect balance of protein, veggies and deliciousness! ?

- CAULIFLOWER
 - 3/4 cup cauliflower (no stems)
 - 1/3 cup milk (more or less depending on your desired consistency)
 - 1 tsp ghee
 - seasoning of choice (I used a roasted vegetable spice blend)
 - ——-
 - 4oz Sizzle Fish Scallops
 
Instructions
- Put cauliflower into blender and pulse until looks like rice
 - Heat a non stick pan over medium heat and saute cauliflower until golden
 - Add cauliflower, ghee, milk and seasoning to blender and puree
 - Sear scallops as desired
 - Top mashed cauliflower with seared scallops
 - Serve with steamed spinach
