Savory Johnny ‘Fit’ Cakes

Did you really expect a girl who was born and raised in New England to not throw in a traditional recipe every now and again? Johnny Cakes are actually quite healthy if you look at how they were orginally made (cornmeal, boiling water and salt). Over the years they have taken on many ‘unhealthy’ remakes. But today, I am giving you a savory Fit Chick recipe that is absolutely delicious!!

Savory Johnny ‘Fit’ Cakes

Fit Ingredients

  • 24g cornmeal
  • 11g unflavored whey protein
  • 1/4 tsp black pepper
  • 2 1 /4 tsp (8g) nutritional yeast*
  • 1/4 tsp baking powder
  • 1 tbs (11g) chia seeds
  • 1/4 tsp salt (I did not use this, but I would recommend it if you don’t watch your sodium)
  • 2tbs coconut milk (or milk of choice)
  • 92g liquid egg whites (or 3 egg whites)

Directions

Mix your dry ingredients; cornmeal, whey protein, pepper, nutritional yeast, baking powder, chia seeds and salt(optional) in a bowl. Add in your egg whites and milk. Mix again. The batter will be thin (it’s supposed to be this way). Spray a skillet with non stick spray and put over medium heat. Pour 1/6 of the batter in your pan (if you have a big pan you can do 2 or 3 at a time). Cook for 1 minutes (you will start to see bubbles on the top) then flip and cook for an additional minute. Remove from the pan and repeat until all the batter is gone.

Ta Da! That’s all there is too it! The hardest part is not burning them while cooking! :) They are meant to be eaten like a tortilla, so fill them how you will! I had 3 of mine with some Earth Balance butter and filled the other 3 with Calabro ricotta cheese!! WOW!! delicious!!!

*If you haven’t used nutritional yeast before, I’d highlyrecommend it!!! It has an amazing flavor, kind of cheese like, and is full of B12. It is low in sodium and fat, yet high in protein and fiber! It is used a lot in vegan cooking as a cheese supplement (I made amazing mac & cheese with it last night, so be on the look out for the recipe!). I use the Red Star brand….. check it out!
