Purple Sweet Potato & Chorizo Frittata
Sometimes the best meals are the ones where you toss it in a skillet and let it do it’s thing! This was one simple and flavorful dish that was too good not to share! I used leftover spiralized veggies, but feel free to use whatever you have on hand!

- ¼ cup spiralized purple sweet potatoes*
- ¼ cup spiralized zucchini*
- 1 oz chorizo, diced
- 3 large eggs
- 1 tsp tallow
Instructions
- Preheat oven to 400 degrees
- Add tallow to cast iron skillet
- Saute sweet potato for 2 minutes
- Add in zucchini and saute an additional 1 minute
- Add chorizo to skillet
- Whisk eggs and add to skillet
- Allow to cook for 2 minutes or until edges begin to firm
- Place in oven and bake for ~15 minutes or until edges are golden and middle is set
