Ok, so I am back with another breakfast recipe! But, I can promise you that I will have some yummy main dishes coming your way in the next few weeks! Until then, let’s just talk about this easy Paleo Cran-Blackberry Overnight French Toast! My favorite part about overnight french toast  is that you can make it on the spot and bake it right up or you can prep it the night before and put it in the fridge to let all those delicious flavors come together and then bake it the next day!

You can also get creative! I used fresh berries, but you could use any combination of fresh or dried fruit that you like! You can add nuts, seeds, shredded coconut. You could even take it up a level and add in some chocolate chips! How amazing would a coconut chocolate chip version be? Um, I think that needs to happen…A.S.A.P! It would be like dessert for breakfast!

If you are keeping it paleo, I would recommend finishing it off with a drizzle of pure maple syrup (if you like extra sweet things!) or even some melted coconut butter! Honey would also work well too!

Ingredients

  • 9 paleo buns , cubed
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup egg whites
  • 1 tsp. vanilla extract
  • 1 tsp. Vietnamese cinnamon
  • 2 scoops collagen
  • 1 cup cranberries
  • 3/4 cup blackberries

Instructions

  1. Line a backing pan with parchment or foil
  2. Whisk together eggs, egg whites, vanilla, cinnamon and collagen in a bowl
  3. Add in bread and gently toss
  4. Add in berries and mix
  5. Pour into pan
  6. Allow to sit overnight
  7. When ready to bake, remove from the fridge and bake at 350 degrees F for 30-40 minutes or until fully cooked

This recipe not only works well for a Sunday brunch but also for breakfast all week long! Since it is already done you can heat up a piece in the morning for a quick breakfast. I paired mine with a couple hard boiled eggs. Or, you can enjoy it cold. To be honest, I actually like it better cold. But, then again I am weird and don’t like hot food. haha

And yes! It is meal prep friendly! I mean, who wouldn’t want to enjoy french toast at their desk during the week? I seriously felt like I was eating dessert every day when I had this! And, to be honest…I did have it for dessert 2 nights in a row! Yup, I doubled down and had it for both breakfast and lunch. It was that good!
