As I have been talking about the last several weeks, I am really focusing on making easier meals that don’t require a lot of time because life is busy! You’ve probably also noticed that they are almost all meal prep friendly! A couple hours preparing on Sunday is a time saver during the week!
Most mornings I wake up and really want something hearty and filling to start the day. Oats, blueberries, and protein do just that for me! One Dish Baked Blueberry Oatmeal is like breakfast comfort food! And who doesn’t want to be comforted early in the morning! Especially when your alarm goes off at 4:45am! haha
I have made this recipe a few times (because it is that good!) and have used both fresh and frozen blueberries! But, the great thing about versatile breakfast recipes like this One Dish Baked Blueberry Oatmeal is that you can swap the blueberries for whatever fruit is in season, use something frozen, add in nuts, seeds or even chocolate chips! It’s a totally customizable recipe!
The ingredients list is simple:
oats
oat bran
oat flour
salt
baking powder
collagen* (40g)
almond milk
egg
egg whites
coconut oil, melted
liquid stevia
fresh blueberries
I have been noticing a trend with my clients where they aren’t taking in enough protein, so I upped it a bit in this recipe with the collagen. However, that is an optional item. Although, if you haven’t checked out the health benefits of collagen, I highly recommend you do! It is such a nutritional powerhouse!

Ingredients
- 1 cup oats
- 1 cup oat bran
- 1/2 cup oat flour
- 1 tsp salt
- 1 tsp baking powder
- 2 scoops collagen* (40g)
- 3/4 cup almond milk
- 1 large egg
- 1/4 cup egg whites
- 3 tbs coconut oil, melted
- 1/2 tsp. liquid stevia
- 1.5 cups fresh blueberries
Instructions
- Preheat oven to 350 degrees F
- Line a baking pan with parchment paper
- Mix together all ingredients except blueberries
- Gently fold in blueberries
- Pour batter into pan and bake for about 35-40 minutes or until just set
- Allow to cool before slicing

* can leave out or sub vanilla protein powder * I actually enjoyed this much more cold for breakfast during the week than hot out of the oven

It’s almost like a big, gigantic blueberry oatmeal cookie bar……but healthy! I even had this for dessert a couple nights! I crumbled some over a bowl of greek yogurt and it was perfect!
Those warm blueberries are so perfect right out of the oven! And a little drizzle of honey or maple syrup over this never hurt anyone, either!
