Mocha Chip Protein Cake

Happy Friday! I hope you have had a great week and have some fun things planned for the weekend! This weekend (tomorrow specifically) is a BIG day for my cousin, Maria. She is graduating college with a degree in Public Health! Maria is the 4th in line of 5 grand daughters in the family. If you remember last August, we enjoyed a fabulous trip together! Maria and I have always been close,despite our 10yr age difference, but have become extremely close over the last year or so. I feel like she is a mini me, which we obviously know is a great thing! JK She is into nutrition and fitness just as much as I am! We are always talking about workouts, meal plans, etc! Plus all the normal girly, cousin stuff! She just started her first job in the fitness field a week ago as a Health Fitness Specialist and I couldn’t be more proud! She is on a mission to change the world of health, so I know we will have another FitFluential Ambassador on our hands soon!
So, what better way to celebrate any special occasion than with cake! And of course, a protein cake because that goes hand in hand with her love of nutrition and fitness! So, let me first say a BIG CONGRATULATIONS to Maria because, even though she hasn’t officially graduated yet, she has! She passed all her classes and will be walking across that stage tomorrow!

Fit Ingredients
- 1/2c (56g) coconut flour
- 2.5 scoops (75g) chocolate whey protein powder
- 1/2c baking stevia (add more or less to taste)
- 1 tbs baking powder
- 1/2c + 2 tbs (148g) liquid egg whites
- 1 tbs (14g) coconut oil
- 1 c (223g) apple sauce
- 1 tbs pure vanilla extract
- 1.5 tsp coffee extract
- 1/4c (28g) cacao nibs

- 8 in cake pan
- parchment paper
- non stick spray

Directions
1. Pre heat your oven to 350 degrees.
2. Line the bottom of you cake pan with parchment paper.
3. Spray the inside of the pan.
4. In a bowl combine your dry ingredients: coconut flour, protein powder, stevia and baking powder.
5. In a second bowl mix together your wet ingredients: egg whites, apple sauce, coconut oil, vanilla and coffee extract.
6. Combine your wet and dry ingredients.
7. Fold in your cacao nibs.
8. Pour batter into your pan and bake for ~25-28 minutes.
9. Remove from oven.
10. Remove cake from the pan and allow to cool on a cooling rack.
11. Top with greek yogurt, mashed berries or just pick it up and eat it like I did
SOOOOOOO Delicious!!! I actually made this cake for the boyfriend (because Maria is 3.5+ hours away), but somehow it didn’t make it to him! I have no idea how that happened?! ;)haha You snooze you lose! The deep chocolate flavor with the coffee reminds me of mocha chip ice cream I eat during the summer! Yum! It was light and moist too! I am thinking about making 2 of these to make a double layer cake with some greek yogurt frosting in the middle! HEAVEN!
