Mocha Almond Pancakes

Happy Thursday! I hope you are having a great week! Mine has been nothing short of busy, but always exciting! :) I shared a picture of this recipe on instagram last Friday and had a lot of requests for the recipe! So, I am here to deliver! I hope you enjoy them as much as I did! Have a great weekend!

Fit Ingredients

  • 1/3 c (35g) almond flour
  • 1 tbs (7g) coconut flour
  • 1/2 tsp baking powder
  • 2 large egg whites
  • 1 tbs brewed coffee
  • chocolate stevia drops, to taste (could also use 1tbs cacao powder plus regular stevia)

Directions

1. Mix together your almond flour, coconut flour and baking powder.

2. Mix in your egg whites, coffee and chocolate stevia drops.

3. Heat your non stick pan over medium heat.

4. Using a tablespoon, drop your batter into the pan.

5. Cook for 3-4 minutes or until you begin to see bubbles form.

6. Flip and cook for an additional 2 minutes.

7. Repeat until all batter is gone.

8. Top with maple syrup or a healthy chocolate sauce*

9. ENJOY :)

*I mixed together 1 tbs cacao powder, 2 tbs coconut milk and some stevia.

Just a little advice….they taste even more amazing if you serve them with 2 tbs of all natural peanut butter along side them too! ?

And some coconut oil roasted brussels sprouts! haha Have to get those greens in at every meal! :) Call me weird, but you all know how much I love my brussels! Yes, I eat them even with pancakes!
