Mashed P.B. Sweetpotatoes

Happy Friday! I hope you had a great week!! On Monday I shared a delicious recipes for Maple Cream Cheese Sweetpotato Bars that were made with the gorgeous potatoes that I received from the California Sweetpotato council! Well, I had so many, I couldn’t even control myself when it came to using them! Today’s recipe is another one that is made with these deliciously sweet, sweetpotatoes!
For those of you who missed Monday’s post, The Recipe Redux had a challenge for all members this month (separate from the normal challenge) that incorporated a new kind of sweetpotato. Yes, it is spelled sweetpotato not sweet potato! The point of making it one word is to emphasize the fact that these special potatoes are a very separate variety than the normal ones you’d find in the market! What makes them so different? They are grown in soft sand and hand sorted during harvest to minimize scratching and scarring. These sweetpotatoes are a nutritional bang for your buck! They have 4g of fiber, 2g of protein and are a good source of vitamin C and A. Plus they are available year round! These beauties are much sweeter and very moist compared to a normal yam. The high nutritional value really separates them from all other potato varieties!!
You all know my love of peanut butter! Normally I would slather my sweetpotato in tons of peanut butter, almond butter or sunflower seed butter…..but this time I decided to make a sweet, creamy batch of mashed sweetpotatoes that was absolutely amazing!! Plus they pack an extra protein punch! I hope you enjoy them!
Fit Ingredients
- 3 medium sweetpotatoes (300g)
- 3 tbs (22g) peanut flour (can sub PB2 but nutritional value will change)
- 1/2 c (113g) non fat greek yogurt
- Sweetener, optional
- Pinch of Salt

Directions
1. Peel and dice up your sweetpotatoes
2. Add your sweetpotatoes to a pot and fill with water until just covered.
3. Boil until fork tender.
4. Drain the water from your sweetpotatoes and mash (This brand of sweetpotato is so moist I was able to mash these up with just my fork!)
5. Mix in your greek yogurt, peanut flour, sweetner and salt, if using.
6. Mash really well and serve!!
These are OUT OF THIS WORLD!!! Sweet and slightly salty! The perfect side dish to anything in my opinion!! Or, even better, DESSERT! I will say, they are also good topped with a few chocolate chips ?
