Happy Monday! I hope you had a great holiday weekend! I was a bit under the weather this weekend, but still managed to cook an amazing dinner yesterday for my family! Nothing beats a nice piece of lamb and some veggies! Now that we are into the full swing of spring, a simple and fresh Blueberry Lemon Breakfast Skillet Cake is the perfect way to start the week! - 1 cup Lemon Stack’d Pancake Mix
- 1/2 cup Xylitol (or dry sweetener of choice)
- 1/2 cup MuscleEgg Vanilla Egg Whites
- 1 container Lemon Elli Quark
- 1 cup blueberries
Instructions
- Pre heat oven to 350 degrees
- Mix together all ingredients except blueberries
- Gently fold in blueberries
- Pour batter into a greased cast iron skillet (or any oven safe pan)
- Bake for ~30-40 minutes or until toothpick comes out clean
- Serve with additional quark, blueberries and lemon zest on top
