Kabocha Squash Waffles

Happy Sunday! I hope you are having a fun and relaxing weekend!! Last weekend I was craving waffles and this pancake recipe! So, with just a minor tweak I was able to satisfy my craving for those pancakes AND waffles in one meal! These are quick, easy and unbelievable delicious! Plus, it’s Sunday and who doesn’t love pancakes and waffles on a Sunday morning?! I hope you enjoy!
Fit Ingredients
- 1/4c (28g) almond flour
- 1/2 tsp ground cinnamon (more or less to taste)
- 1/4 tsp baking powder
- 1/2c (85g) kabocha squash, (no skin) cooked and mashed
- 2 large egg whites
- 2 tbs milk
- sweetener, optional

- waffle iron
- non stick spray/oil

Directions
1. Vigorously blend all ingredients in a bowl by hand (or put into a blender).
2. Follow waffle iron directions for cooking.
3. Serve warm with desired toppings!
Cinnamon, sweet kabocha and waffles in one recipe! My taste buds were in waffle heaven! They were light, fluffy and packed with flavor! They were perfect topped with some 100% pure maple syrup! I paired mine with some egg whites and sliced apples!
