What do you do when you have a whole bunch of veggies that need to be used up ASAP? You toss them all into your cast iron skillet with you favorite protein and create a one dish “breakfast skillet” It’s the perfect way to pack in your veggies, power up for the day….and only have to worry about washing one dish! ?

  • 1 cup kale
  • ¼ onion, diced
  • ½ cup portobello muchrooms, sliced
  • 1 roasted hatch chile, diced
  • 1-2oz chorizo
  • 1 egg

Instructions

  1. Saute chorizo and all veggies in your cast iron skillet
  2. Crack an egg on top
  3. Cover with tin foil and allow to cook until desired doneness
  4. Serve with your favorite hot sauce, if desired

Notes The 5280meat chorizo packs so much flavor, I do not add any additional herbs. However, feel free to season as desired 3.2.2925
