Hatch Chile & Chorizo Breakfast Skillet
What do you do when you have a whole bunch of veggies that need to be used up ASAP? You toss them all into your cast iron skillet with you favorite protein and create a one dish “breakfast skillet” It’s the perfect way to pack in your veggies, power up for the day….and only have to worry about washing one dish! ?

- 1 cup kale
- ¼ onion, diced
- ½ cup portobello muchrooms, sliced
- 1 roasted hatch chile, diced
- 1-2oz chorizo
- 1 egg
Instructions
- Saute chorizo and all veggies in your cast iron skillet
- Crack an egg on top
- Cover with tin foil and allow to cook until desired doneness
- Serve with your favorite hot sauce, if desired
