Fudgey Kabocha Brownies

Serves: 8

Happy Friday! I hope you have had a great week! Although not as warm as last weekend, we are still expected to have sun, which is always welcome! :) There are no big plans in the mix for the weekend other than some much needed relaxation! This week has been very busy and then with my nightly cleaning sprees, I am exhausted! Maybe a movie will be in order? ?

OK, so yes, this is REALLY happening right now!!!! KABOCHA BROWNIES!!! If you can make brownies out of beans, why not a kabocha squash?! Yes, it is true…it can be done! And not only can it be done, BUT it can be done so well that the boyfriend had no idea he was eating squash and requested a second batch! Even after finding out there was squash in them….he STILL wanted more! You can’t taste the squash at all! I know this is a bit strange, but trust me, you will love them! I hope you give them a try! :)

As I am writing this, I am thinking they might even qualify for Laura’s #strangebutgood Friday link up! Make sure to check out the other crazy delicious recipes that are shared there today too! :)
