Fresh Plum Muffins

Muffins have been my ‘go to’ recipe lately! They are simple to make, packed with healthy, ‘fit’ ingredients and are a great way to use all the fresh fruit flavors of the season! I also really enjoy them because they are a great addition to some protein on a hot summers morning or make a great snack or pre workout meal. Plus, when you are in a rush or traveling on vacation you can put them in ziploc bags and take them with you without having to worry about refrigerating them! With all those benefits, how can you not love muffins!! ?

Fresh Plum Muffins

So sweet from the fresh plums!

Fit Ingredients

  • 1c (80g) oats
  • 1/4 (23g) unflavored or vanilla whey protein
  • 2 tsp baking powder
  • 2 tbs stevia
  • 1/2c (124g) reduced sodium cottage cheese
  • 3tbs (46g) liquid egg whites
  • 1tsp apricot extract (can sub with vanilla)
  • 1/2c (113g) jarred peach, apple, apricot baby food (all natural) can sub with unsweetened applesauce, but this combination of fruits gives it a nice sweetness
  • 1/2c (112g) fresh plums, chopped

Directions

Pre heat your oven to 350 degrees. Spray 3 muffin cups with non stick spray. In a bowl, mix your oats, whey, baking powder and stevia in a bowl. In a second bowl mix your cottage cheese, egg whites, apricot (or vanilla) extract and baby food (or applesauce). Mix well. Mix your wet ingredients into your dry ingredients. Gently fold your plums into your batter. Divide your batter evenly among 3 muffin cups. Bake for 30-32 minutes.

Serve these sweet, fresh muffins alongside some greek yogurt, egg whites or fresh ricotta cheese! Or for a sweet treat top it with some homemade coconut cream and make it your dessert!
