French Apple Pie….The Fit Chick Whey!

This delicious french dessert has been remade into a healthy version that you can eat any time of day! Serve it hot or cold, fall or summer!

Fit Ingredients

Pie

  • 1/4 c (28g) low carb baking mix (I used Bob’s Red Mill) or flour of choice
  • 1 1/2 scoops (44g) vanilla whey protein
  • 1 1 /2 tsp apple pie spice
  • 1/4 c splenda/stevia
  • 3 eggs
  • 1/2 tsp liquid stevia
  • 3/4 c coconut milk (or milk of choice)
  • 320g (about 3 medium) peeled and sliced apples

Topping

  • 1/4 c splenda or stevia
  • 1 tbs cinnamon
  • 1/3 c chopped walnuts

  • 9 in pie plate
  • non stick spray

Directions

Pre heat your oven to 325 degrees. Spray your pie plate with non stick spray. In a ziplock bag mix your apples, apple pie spice and 1/4 c sweetener. Close bag and shake well. Evenly spread your apples in the pie plate. In a bowl, mix your baking mix (or flour) and whey protein. Add your eggs, liquid stevia and coconut milk to the flour and mix well. Pour your batter over the apples. In another bowl, mix your topping ingredients. Spread over the top of your pie. Bake for 40-45 minutes. Remove from the oven and let sit for 5 minutes before slicing.

Your whole house will be filled with the smell of apple pie all afternoon! It’s amazing!
