Figgy Breakfast Pie

Surprise! Bet you didn’t think I was going to share a recipe with you today, did you? Well I just wanted to keep you on your toes! Life is always more fun with surprises!
Yes, I have been on quite the breakfast recipe binge lately! However, I love eating breakfast food for, well, breakfast, lunch and dinner! And even snack! Many of you saw this recipe on Wednesday when I shared a picture of it on Instagram! I ate this, along with some oven roasted asparagus as one of my snacks!

Fit Ingredients
- 2 large eggs
- 4 egg whites (or 1/2c liquid egg whites)
- 1 tsp pure vanilla extract
- 3/4c coconut milk
- 1/2 tsp lemon juice
- 2oz (56g) MontChev goat cheese
- 3/4-1c sliced fresh figs (I used 126g)
- 1/2 tsp cinnamon
- 1/4c (23g) vanilla protein powder
- 1/3c powdered stevia (adjust to taste)

- cast iron skillet
- non stick cooking spray

Directions:
1. Pre heat your oven to 325 degrees.
2. Spray your skillet with non stick cooking spray.
3. Using an electric mixture, cream your goat cheese, stevia and eggs together.
4. Add in your egg whites, vanilla extract, coconut milk, lemon juice, and protein powder.
5. Mix well.
6. In the bottom of your skillet, lay your figs in a single layer.
7. Sprinkle your cinnamon on top of your figs.
8. Cook the figs for about 2-3 minutes.
9. Pour your egg mixture over the figs and continue to cook for an additional 3-4 minutes.
10. Remove the skillet from the stove and place in the oven.
11. Bake for about ~30 minutes or until set in the middle.
12. Allow to cool slightly before slicing!
DELICIOUS, DELICIOUS, DELICIOUS!!!! It had amazing sweetness from the figs and tang from the goat cheese, plus a slight hint of cinnamon! Oh Yes! I was in food heaven! As I mentioned above, I ate mine (I had 3 pieces actually) as a snack with a side of asparagus and then I packed the last 3 pieces as a snack the next day! So yes, this recipe game me TWO servings, hahaha, but these pieces are large even when it’s divided into 6 pieces!
Yes, I did eat 3 pieces…I admit it! I just didn’t want you all to think I was a pig, so I only took 2 pieces then went back for a 3rd ? Maybe I should have named it ‘Piggy Breakfast Pie’
