Happy Monday! I hope you had an amazing weekend! The last few days have been full of celebration! Not only was last Thursday the 2yr birthday of the blog, but today is actually my birthday AND my sisters birthday! :) Yes, although we are 2 years apart, we still share a birthday! So, I would like to take a moment and wish my sister a huge HAPPY BIRTHDAY!!!! Katie, I feel truly lucky to have you as my sister! I couldn’t ask for a crazier, yet more supportive and loving one! Muah!

And of course, who doesn’t love cupcakes on their birthday?! These little cake batter cupcakes are protein packed and mighty delicious! They taste exactly like yellow confetti cake! I hope you enjoy them! Have an amazing day! :)

  1. CUPCACKES
  2. 3 tbs (21g) almond flour
  3. 1 tbs (7g) coconut flour
  4. 2/3 scoop (21g) Cellucor Corfetti Cake Batter Protein Powder
  5. 1 tsp baking powder
  6. 2 large eggs
  7. 1/2 c (113g) greek yogurt
  8. 1/2 tsp butter extract, optional but makes them taste way better! 😉
  9. 1 tbs (21g) honey
  10. FROSTING
  11. 1/2 c (113g) greek yogurt
  12. 1/2 scoop (17g) vanilla casein protein powder
  13. 1/4 tsp almond extract

Instructions

  1. Preheat oven to 350 degrees
  2. Line 5-6 muffin cups with paper lines
  3. Whisk dry ingredients in a bowl
  4. Mix together wet ingredients
  5. Combine wet and dry ingredients
  6. Divide batter evenly among cupcake liners
  7. Bake for 18-22 minutes or until set
  8. Once cooled, mix together ‘frosting’ ingredients
  9. Top cupcake with frosting
  10. Store in the refrigerator in a sealed container
