Ingredients

  1. 1c (112g) cashew meal
  2. 1/2 c (30g) shredded, reduced fat coconut
  3. 3 tbs coconut oil, melted
  4. 1 tbs honey
  5. 1tsp baking powder
  6. pinch salt, optional
  7. 3 tbs almond milk
  8. 1/4 tsp coconut extract

Instructions

  1. Pre heat oven to 350 degrees
  2. Combine all ingredients in a bowl
  3. Divide batter evenly on cookie sheet
  4. Bake for ~ 17 minutes or until golden (they will be VERY soft when you remove them — be gentle)
  5. Allow cookies to cool
  6. Place cookies in the refrigerator for 1 hour or until set
