Citrus Pancakes

Serves: 1 (6-8 pancakes)

Happy Thursday! I hope you are enjoying your week! We have been enjoying consecutive days of sunshine, which has been so nice! I hope the trend continues! :)

Today I am sharing with you the recipe for these delicious pancakes! I posted a breakfast shot of these on Monday and immediately I was inundated with requests for the recipe! Of course, I already had plans for Tuesday and Wednesday posts, so I promised these by the end of the week! Tomorrow I will be visiting over at a surprise location (come back tomorrow to see where I will be), so I knew these had to get out today! Now that the warmer temperatures are finally coming around my body is craving the fresh flavors of summer! These pancakes hit the spot! I hope you enjoy them! :)

Fit Ingredients

  • 2 tbs (14g) almond flour
  • 2 tbs (12g) chestnut flour (or flour of choice)
  • 1 tbs (7g) coconut flour
  • 1 tsp baking powder
  • 2 large egg whites
  • 1 tbs (31g) apple sauce
  • orange stevia, to taste (or 1 tbs orange juice)
  • 1 tbs orange zest
  • 1/2 c (112g) greek yogurt
  • lemon drop stevia, to taste (or 1 tbs lemon juice + sweetener)

  • non stick pan
  • cooking spray

Directions

1. In a bowl, beat your egg whites until frothy. (should look like foam)

2. Gently mix in your apple sauce, orange stevia and orange zest.

3. In a second bowl combine your almond flour, chestnut flour, coconut flour and baking powder.

4. Fold your dry ingredients, gently, into your egg whites, trying not to deflate them.

5. Coat your pan with non stick spray.

6. Heat the pan over medium heat.

7. Drop the batter into the pan in 1 tbs size servings.

8. Cook 3-4 minutes and then flip and cook for an additional 2 minutes.

9. Repeat until the batter is gone.

10. In another bowl mix together your greek yogurt and lemon stevia (or lemon juice and sweetener).

11. Layer your greek yogurt between the orange pancakes and eat! :)

I love the flavors of citrus and these pancakes were to die for!! They were fluffy, light and refreshing! They were the perfect way to start my Monday…..and the last 9 days! Yes, I have eaten them every day for 9 days in a row!! They are that delicious!!!
