Cinnamon Pecan Waffles {A Recipe Redux}

Happy Tuesday! I hope you are having a great week!! I am really excited today because it is the 21st of the month and that means it is time to share this months Recipe Redux challenge recipe! For those of you who aren’t familiar with this group, it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This months challenge was ‘May Showers’…..as in Bridal Showers, Baby Showers, Graduation Parties and any gathering that might be revolved around brunch! When I think of brunch, the first thing that comes to mind is the amazing waffle bar that my mother likes to make for special gatherings! She brings out the waffle iron and lays out quite the spread of toppings from fruit, nuts, whipped cream, chocolate chips, etc! It’s like a sundae on a waffle! So, for this month’s challenge I decided to spice up our normal waffles……and top mine with my 2 favorites; greek yogurt and strawberries! I hope you enjoy!
Fit Ingredients
- 1/2 c (60g) pecan meal
- 1/2 c (48g) chestnut flour
- 1 1/2 tbs coconut flour
- 1 tbs baking powder
- 2 tsp cinnamon
- 8 large egg whites
- 1/4 c (61g) apple sauce
- 1/4 c milk
- sweetener, optional
- toppings of choice

- non stick spray

Directions
1. In a bowl whisk together your dry ingredients: pecan meal, chestnut flour, coconut flour, cinnamon and baking powder.
2. Mix in your wet ingredients: egg whites, apple sauce and milk.
3. Cook waffles based on waffle maker directions.
4. Serve with toppings of choice!
Sweet cinnamon, nutty pecans and cool greek yogurt make these waffles absolutely amazing!!! These can easily be made ahead and stored in a ziploc bag in the refrigerator if you, say want to eat them every day for a week? ?
