Cajun Salmon & Brussels Sprouts Frittata
It’s not often that I have leftover salmon, but when I do, I usually turn it into a quick breakfast the next day! This simple dish took only minutes to toss together and then baked while I was getting ready for the day! It also makes a great meal prep dish that you can reheat for a quick mid week meal when you are in a rush! I hope you enjoy! xxoo
Cajun Salmon & Brussels Sprouts Frittata Print Prep time 5 mins Cook time 15 mins Total time 20 mins A very quick and versatile breakfast dish that is great for a Sunday brunch or week day meal! - 2 large eggs
- splash milk
- 1 tsp (or more) cajun seasoning
- 2 oz cooked salmon, flaked
- ¼ cup shaved (or very thinly sliced) brussels sprouts*
- S&P, as desired
Instructions
- Preheat oven to 425 degrees
- Spray a 4in ramekin with nonstick spray
- Whisk together eggs, milk and seasoning
- Mix in flaked salmon and brussels sprouts
- Pour into ramekin
- Bake for ~ 15-20 minutes or until set
- Serve with fresh fruit or a garden salad
