Blueberry Yogurt Pie

Happy Monday! I hope you had a great weekend! We had some crazy (and pretty disgusting) weather this weekend. The sunny forecast turned into a rainy and humid mess! That left me to do two things (because it was WAY TOO HOT to bake)…..head to the movies and spend lots of time relaxing and reading! Can’t complain about a weekend like that, can you? With all the craziness going on right now (that I promise to share soon ;)) the relaxation was definitely needed!
One of the things I crave when it is hot is fresh berries! A few weeks ago I had a major craving for a blueberry pie! Of course that craving struck me at 8:00pm, so I wasn’t about to start baking a pie at that hour. I did the next best thing….I created this super easy blueberry ‘pie’! This recipe would work amazing with any berry or fresh summer fruit! I hope you enjoy!
Fit Ingredients
- 3/4 c (105g) blueberries
- 1 1/2 tbs (9g) chia seeds
- 1/2 c (113g) greek yogurt
- 1 tbs (7g) vanilla protein powder
- lemon zest
- sweetener, to taste

- 4 inch baking dish/pie pan
********************************************
Directions
1. In a bowl combine your blueberries, chia seeds, sweetener (if using) and lemon zest. Allow to sit for 20 minutes.
2. Pre heat your oven to 350 degrees.
3. Combine your greek yogurt and protein powder.
4. Spray your baking dish with non stick spray.
5. Pour your blueberry/chia mixture into the dish.
6. Spread your yogurt on top.
7. Bake for ~ 15-18 minutes or until the top is set.
8. Eat hot or cold.
This way just like eating blueberry pie, but without the crust!!! The blueberries were thick and jam like from the chia seeds!! I enjoyed this for dessert 2 nights in a row. I tried it hot and cold and preferred it cold! Then again, I am not a fan of any hot foods in general! haha Either way, it is amazing and the perfect way to kill a craving for sweets…and pie! ? It is even healthy enough for breakfast too!
