Blueberry, Honey & Grilled Goat Cheese Sandwich

Happy Thursday! I hope you are having a great week! If you read yesterdays post, then you know all about my cleaning spree on Tuesday night! Well, I don’t know if it is the warm weather or what, but it continued again last night. I decided that I need to clean out all the drawers that are “hiding” things like oh, years of papers! Basically anything that didn’t have an assigned home would get hidden in a drawer because I loathe clutter! 2.5 hours later (I think that’s about as long as I can clean before I get hungry ;)) I cleaned every drawer out and the linen closet! It’s a good thing today is trash day! On the plus though, I did find $80 in Nike gift cards, $50 in TJ Maxx gift cards and a brandy new pair of headphones!! I was most excited about the headphones because I am in serious need of a new pair, but can’t find the ones I like anywhere! I most have bought an extra pair awhile back! So excited! But you know what the gift cards mean….I must go buy new clothes to replace the ones I just got rid of! haha Or save them for a rainy day ? Ok, now time for some food!

This recipe was a quick idea I had after a workout to satisfy my sweet and salty craving! It definitely did that and more! The honey added such a nice sweetness, plus gave my body that quick carb that it needs right after a workout!

Blueberry, Honey & Grilled Goat Cheese Sandwichno image

Fit Ingredients

  • 2 slices bread of choice
  • 1/4 c mashed fresh Driscolls blueberries
  • 1 oz goat cheese
  • 2 tsp raw honey

Directions

1. Spread your mashed blueberries on 1 slice of bread.

2. Spread your goat cheese on the second slice of bread.

3. Drizzle honey over the goat cheese.

4. place goat cheese and honey bread on top of blueberry bread.

5. Heat a non stick skillet over medium heat.

6. Place your sandwich, goat cheese side down, in the pan and cook until golden.

7. Flip and repeat on the blueberry side.

8. Slice in half and serve.

Sweet and salty all in one bite makes me one very happy girl! This sandwich hit all those notes PLUS some! Absolutely delicious! Plus, it was a great quick meal, post workout with a sliced apple!
