 Happy Monday! I hope you had a great weekend! I want to start off this Monday by saying a huge CONGRATULATIONS to Melissa and Alex from SweetSpreads! They got married over the weekend! They are the sweetest couple and I wish them both all the best! ?

  1. 1/2 cup (20g) oats
  2. 1.5 tsp (3g) ground flax
  3. 1 tsp pumpkin pie spice
  4. 1/2 tsp baking powder
  5. pinch salt, optional
  6. 1/4 cup (61g) pumpkin (not pie filling)
  7. 2 tbs milk or choice
  8. 1/2 tsp pure vanilla extract
  9. Topping
  10. 1 tbs (11g) whipped cream cheese
  11. 1 tbs (7g) crushed peacans

Instructions

  1. Preheat oven to 350 degrees
  2. Coat a oven safe baking dish with non stick spray (I used 6-in ramekin)
  3. Mix together all ingredients except for toppings
  4. Pour batter into dish
  5. Bake for ~30 minutes or until set
  6. Top with cream cheese and pecans
