Baked Pumpkin Pie TVP

Happy Thursday! I am so excited today because we are only 1 week away from Thanksgiving! Can you believe it?! I am slightly obsessed with anything holiday related, so pardon my early excitement! :) As I mentioned the other day, I am going to fill you with all things holiday food related! Of course those recipes will be of the healthy version though! Plus, these single serving recipes are great because it means there won’t be any left overs to nibble on later! Remember, I was talking about portion control Tuesday? ?

Baked Pumpkin Pie TVP

Fit Ingredients

  • 1/3c (32g) TVP (or oats)
  • 10g vanilla protein powder
  • 2 tsp baking stevia
  • 2 tsp pumpkin pie spice (adjust to your liking. I like lots!)
  • 1/4c (61g) pure canned pumpkin
  • 1/2tsp pure vanilla extra
  • 2 large egg whites
  • 1/4c water

  • 4in ramekin
  • non stick cooking spray

Directions

1. Pre heat your oven to 350 degrees.

2. Spray your ramekin with non stick spray.

3. In a microwave safe bowl combine your TVP and 1/4c water. Microwave about 2 minutes or until the TVP is soft and the water is absorbed*.

4. Mix all remaining ingredients into your TVP.

5. Pour into your ramekin.

6. Bake for ~40 minutes or until the edges become golden and the center is set.

7. Serve with a dollop of sweetened greek yogurt and a sprinkle of cinnamon!

*If using oats, skip this step.

Baked Pumpkin Pie TVP

This quick little recipe was super easy to throw together! I mixed up the ingredients, popped it in the oven while I showered and got dressed and had a great snack waiting for me when I was done! It was slightly crispy on the outside and soft on the inside! It packed all the flavors of pumpkin pie, but without the guilt! Plus it is loaded with fiber and protein, so it kept me full for a long time!! This would be perfect for breakfast, snack or even dessert! :)
