Pear Butter, Goat Cheese & Arugula Pizza

Happy Thursday! I am really excited today because it is the 21st of the month and that means it is time to share this months Recipe Redux challenge recipe! For those of you who aren’t familiar with this group, it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! The amazing bloggers who participate in this have come up with so many delicious, yet healthy recipes! If you haven’t been to the Recipe ReDux site yet, definitely pop over and check it out! This months challenge, in honor of the Oscars on February 24th, was to create a healthy recipe inspired by our favorite movie scene or featured dish. How fun is that?! Julia Roberts is my favorite actress, so I immediately thought of my favorite movie, Steel Magnolias. I was on the phone with my sister at the time and told her about the challenge and she suggested I make the ‘armadilla’ cake (have you seen the movie? ;))!! haha There was no way! I was making an ‘armadilla’ cake! A few minutes later the boyfriend called and I told him about the challenge. Within 2 seconds he said, “Why don’t you do Eat Pray Love? They eat all that Italian food like pasta and pizza!” BINGO!! That was it! He had found the perfect movie that I LOVE! (Not to mention that he is almost a full blood Italian who thinks about pasta no less than 20x a day! ;)) For those of you wondering, he did go see that movie with me when it came out! Isn’t he the best?!  But he was right, the food in this movie was 100% drool worthy!!

Just a few days prior to seeing this months challenge I had posted a picture of this pizza on instagram. I had planned on sharing the recipe a few days later since I had so many requests for it on IG, but once I read this month’s challenge, I knew I wanted to save it for today! So, for those of you who have been waiting for this, I am sorry, but it has finally arrived!

This pizza is just as delicious as any regular pizza, except it is much healthier!! You can enjoy this any night of the week and not feel stuffed after eating the entire pie! I hope you enjoy it!

 

Fit Ingredients

Cauliflower Crust

  • 2 1/2 c* (240g) cauliflower, riced  (*2 1/2c cauliflower before you rice it)
  • 2 large egg whites
  • 1 tbs (7g) flax meal
  • seasonings of choice (I used 1 tbs Italian seasoning)

Toppings

  • 2 tbs (34g) pear butter
  • 1 oz (28g) low sodium goat cheese
  • small handful of arugula

  • baking sheet
  • parchment paper
  • non stick spray/olive oil

*************************************************************

Directions

1. Pre heat oven to 425 degrees.

2. Line your baking sheet with parchment paper.

3. Spray your parchment paper with non stick spray (or coat with olive oil)

4. In a bowl combine your riced cauliflower, 2 large egg whites, flax and seasoning.

5. Spread your mixture on the parchment paper in desired pizza shape.

6. Bake for about 35 minutes or until edges are golden and the center is firm.

7. Take the crust out and spread your pear butter on top.

8. Sprinkle your goat cheese on top of the pear butter.

9. Return the crust to the oven and bake for ~ 5 minutes or until cheese is melted.

10. Remove from the oven and top with fresh arugula.

11. Serve!

The crust will be slightly less firm than a regular pizza crust, however you will still be able to hold it and eat it like a regular slice!  The pear butter and goat cheese create an amazing sweet and savory combination that is enhanced by the peppery taste of the arugula! It really doesn’t get any better than healthy pizza, does it?!  I have made this recipe quite a few times and seem to love it more and more every time!!
